I've had a refreshing week+ of culinary adventures. The goal was to blog the journey daily to share it with you! epic fail. surprise. So here are the fruits (vegetables?) of my/our labor which would not have happened without the garden at the Kinsey Institute (my new place of residence), the CSA bag, Co-op whole foods, and many friends with helping hands. Thank you for a joyous, yummy week (plus)!
16 August
Veggie Shepherd's Pie (technically "Mushroom, Pea, and Pearl Onion Pot Pie with Herbed Potato Topping")
My favorite part of this recipe is the cream cheese...mmmm, mmmm
sauteing it all. Yes, I ate mushrooms that night!
adding the cream cheese - best part!
I got distracted by Pan, the cute kitty, and forgot to take pictures of the rest of the process...
finished product! K added some chives from M&B's garden to garnish the top. All in all, I was pleased (although nothing can top eating this at the BVS house after B slaved over it - mmmmm! The first time I had this dish was when I came home after a fun day in Chi-town)!
19 August
Spaghetti Squash and Balsamic Beans
This is an oldie, but a goodie. The first time I had this dish was at BVS orientation in August of 2007 - I refused to eat the spaghetti squash (because, ewww - I hate squash! little did I know...) and instead had my beans on regular pasta. I had this again at my friend B's house and decided I loved it! Since then I've made this dish over and over again, including once for my mom. Oh, and I love squash!
of course, even a familiar recipe took longer than expected, so while we waited we had some bruschetta! Fresh tomatoes and basil from the garden, yummy and fresh mozz, olive oil and some of Kroger's "oops, we over baked!" italian bread.
B came for dinner again (since M and P were on a backpacking trip) and it was D's first night in town, so he came over, too! We also had some cornbread with dinner, which I won't talk about...it's the only thing that M has ever made that tasted, well, gross.
20 August - Par-tay day!
Crunchies
Peach and Apple Cobbler
Party food! Crunchies are a classic camp recipe, and quite popular at the party, I think!
you can see our plethora of tomatoes from the garden and the 10 lbs of peaches I was inspired to purchase around the crunchies... With those peaches as well as some apples from the CSA I made the cobbler.
Then we needed to eat dinner - so I made a Coconut Curry that I love! CSA beans, okra (or maybe those were peppers...they were kind of spicy...), purple pepper, orange pepper, and onion. Edamame and broccoli from Kroger.
21 August
Saturday morning was Sausage Gravy, per P's request. I didn't take a picture...but trust me, it looked like sausage in white gravy. What was really worth capturing were the biscuits B made! Yum!
26 August
Tomato Potato Casserole
Okra with Corn and Tomatoes
Neither one of these recipes need to be made again, but they used CSA and garden veggies and were fairly tasty. Still pretty sure the "okra" is some sort of pepper...
More to come, I'm sure!
